2022 Harvest 4

Howdy folks and welcome to week 4!! This week it’s all about those GREENS!! Yep, there’s a lot of greens this week and I’ve got some fun recipe suggestions to help you get through the sea of green in your boxes. The weather has made it pretty great growing conditions for greens and has made things a little slower for everything else. However, I promise you won’t be eating salad forever. There’s a lot of great things on the horizon but for now leafy greens are where it’s at!

The mustard greens are wonderful served with a little oil, lemon juice and sea salt for a simple salad. Or braised and cooked liked the recipe suggestions below. The collard greens are AWESOME right now and I love serving them raw in a “slaw” or salad. Just make sure you stack them, roll them and then slice them as thinly as possible. Then massage a little oil and lemon juice over them before dressing them to your liking. There’s also plenty of recipes below that incorporate the collards. The garlic scapes are popping and we love throwing them straight onto the grill with a little sea salt and oil. They kind of taste like garlic fries that way! Radishes are my favorite served sliced up with a dollop of butter and a sprinkle of sea salt. And the romaine lettuce makes for a killer Caesar salad and the head lettuce makes for a wonderful everyday kind of salad. Anyhow, I hope the recipes below give you a little inspiration of your feeling overwhelmed with all the greens!

Howdy folks and welcome to week three! We hope you enjoyed last week’s veggies and are ready for another week of fresh produce! With the weather finally warming up things are starting to crank outside and we’re starting to feel more caught up. This continues to be a whacky spring but we’re rolling with it and feeling pretty darn good about where things are.

We hope you all enjoy the bounty!

Harvest 3

  1. Spinach

  2. Head Lettuce

  3. Bok Choy

  4. Carrots (remove the greens and store them separately)

  5. Turnips (remove the greens and store them separately)

  6. Kale

  7. Green Garlic OR Garlic Scapes

Recipe Suggestions

Miso Glazed Turnips (one of my all time favorite recipes!!)

Carrot, Beet & Date Breakfast Muffins (if you’ve still got beets from last week!!)

Bok Choy, Kale & Beet Slaw with Creamy Cashew Dressing (replace the beets with carrots this week!)

Spinach, Apple & Date Muffins (Toddler and Adult friendly!)

2022 Harvest 2

Howdy folks and welcome to week 2 of your CSA. We’re happy to report that the fields are starting to dry out a bit and the only thing coming from the hoop house this week is the beets! Everything else is outdoors and it feels so good to be moving on from the greenhouses to the fields. The next outdoor beets are still a ways out so don’t worry, you won’t be getting beets again for a while. Sorry for the two weeks in a row!

This week we’re excited to include mustard greens (they make the best salad!) kale, radishes or turnips, and more green garlic. It’s a tasty box and we hope you all enjoy the bounty! Happy (almost) June!

Harvest 2

  1. Beets (remove the greens and store them separately)

  2. Bok Choy

  3. Green Garlic (use the same way as you use regular garlic, no peeling necessary!)

  4. Mustard Greens

  5. Kale

  6. Radishes OR Turnips (remove the greens and store them separately) this will prevent the roots from going soft. The greens are all edible!
