Howdy folks and welcome to week 7 of your Tumbleweed Farm CSA. We hope this cool and breezy weather is treating you well! We’ve had a very chilly week at the Farm and while the working conditions are great, we’re ready for some of our summer crops to start cranking so a few warmer days will be welcome! With that being said, things still look awesome and the summer bounty is starting to flourish. Next week you’ll see the first zucchini along with some other early summer crops so get ready! In the meantime, this week’s box is a reflection of the weather and season so we hope you enjoy some of these cooler weather veggies.

Also—the beet and cottage cheese hummus in the first recipe below is a MUST TRY!!! It’s fantastic and will be a great use of all the beets you’re receiving right now. Holler if you make it!

Harvest 7

  1. Purple Cabbagethis tasty brassica helps reduce inflammation in the body. Inflammation is the leading cause of disease and incorporating more anti-inflammatory foods is very beneficial.

  2. Scallions—Great for overall immune health. Scallions are a good source of vitamin C and a flavonoid called quercetin. Both can strengthen your immune system and help it fight illnesses.

  3. Head Lettuce—A rich source of vitamins A, K and folate. Contains anti-inflamatory properties.

  4. Beets—rich in folate, manganese and copper. Copper is very important as it helps make red blood cells and helps keep your immune system healthy.

  5. Arugula—one of the healthiest leafy greens! Containing a ton of antioxidants and anti -inflammatory properties along with being jam-packed with magnesium which helps prevent high cholesterol and high blood pressure.

  6. Turnips—Rich in vitamins and minerals turnips are high in antioxidants which help provide anti-inflammatory, anticancer, and antibacterial effects, among other benefits. The greens boast a whole list of their own nutritional values but the biggest ones are that they’re high in vitamin A and calcium. Please remove the greens from the turnips and store them separately so the roots don’t get soft.

  7. Kale—super high in antioxidants, contains vitamin C, Vitamin K, Manganese and various polyphenols. To make this easier to digest make sure to cook your kale or massage it really well before eating raw.

  8. Fresh Garlic—the list of health benefits is almost too long!! It’s anti-fungal, anti- inflammatory, boosts immune health, and is full of antioxidants! Just eat garlic with every meal!

Howdy folks, and welcome to Week 6 of your Tumbleweed Farm CSA!

This week's box has us absolutely PUMPED. This is the harvest we've been waiting for all season—a colorful abundance of veggies packed with nutrition, flavor, and summer goodness. Every box feels a little like a celebration this week!

The recipe below for our Love Your Liver Detox Salad is a must-try. It's incredibly flavorful, and the combination of textures along with the carrot-ginger miso dressing makes it something truly special. I can't wait for you all to give it a try! If you happen to have a little cilantro left from last week's box (and maybe one lonely carrot hanging out in the crisper drawer), toss those in too. Otherwise, everything you need is included in this week's share. It's hands-down my favorite salad of the season so far.

We hope you enjoy this bounty as much as we do. It's been hot, sweaty work out in the fields lately, but boxes like this make it all worthwhile. Watching the farm burst into color and abundance is one of the most rewarding parts of the season, and we're thrilled to share it with you.

Harvest 6

  1. Broccoli—Broccoli contains many vitamins, minerals, fiber, and antioxidants. Research suggests that some of broccoli’s plant compounds are thought to help prevent cancer when eaten often. Broccoli’s benefits include helping reduce inflammation, keeping blood sugar stable, and strengthening the immune system.

  2. Lettuce Mix—A rich source of vitamins A, K and folate. Contains anti-inflamatory properties.

  3. Beets—rich in folate, manganese and copper. Copper is very important as it helps make red blood cells and helps keep your immune system healthy.

  4. Radishes- are a rich source of magnesium, potassium and vitamin C. Remove the greens from these to help keep the roots crisp for storing.

  5. Rainbow Chard—this dark leafy green is high in antioxidants and important vitamins and minerals including vitamin C, K and A and a healthy dose of magnesium (which many people are deficient in).

Howdy folks, and welcome to Week 5 of your Tumbleweed Farm CSA share!

It's been a hot one out here this week. While plenty of our summer crops are absolutely loving the heat, a few of our cool-weather favorites are ready for a break. This will be your last week receiving spinach until the fall, bok choy is taking the summer off until September, and arugula is hitting pause for a few weeks as well.

The good news? Summer is just getting started. The tomato plants are beginning to crank, peppers are looking fantastic, zucchini and cucumbers are growing like weeds, the melon patch is thriving, and even the winter squash is showing off beautiful, healthy foliage. It's an exciting time of year on the farm as we watch the seasons shift and the summer crops take center stage.

This week's Recipe of the Week, Korean Beef Bulgogi with CSA Vegetables, is so gosh darn delicious and a fantastic way to use up a big portion of your share in one colorful, flavor-packed meal. If you give it a try, we'd love to hear what you think!

  1. Cilantro—Cilantro is one of the most potent and detoxifying herbs for our bodies. It helps remove heavy metals from our bodies and has antibacterial properties along with being one of the most adrenal supporting herbs out there.

Carrots are also high in antioxidants and important minerals for overall body health. Remove the greens on the carrots before storing them so they don’t go soft.

  5. Turnips—Rich in vitamins and minerals turnips are high in antioxidants which help provide anti-inflammatory, anticancer, and antibacterial effects, among other benefits. The greens boast a whole list of their own nutritional values but the biggest ones are that they’re high in vitamin A and calcium. Please remove the greens from the turnips and store them separately so the roots don’t get soft.

  6. Spinach-rich in iron, potassium, vitamins C & E, and magnesium. Spinach can also aid in digestion and has anticancer properties. Eat this veggie up!!

  7. Head lettuce— high in folate (if you’re suffering from allergies this season eat this green up!) It’s also a good source of copper and vitamins A, K and C.

  8. Collard Greens—not only are they high in vitamin K they are also a good source of cancer fighting compounds. They are rich in glucosinolates which is a sulfur-containing compound which is thought to help stop cancer process at different stages of development. Pretty rad!
