2025 Harvest 6

Howdy folks and welcome to week 6 of your Tumbleweed Farm share. We’ve had rain, we’ve had wind, we had a light frost, and we’ve had plenty of sunshine! The weather the past two weeks has been bonkers but that’s late spring/early summer for ya.

This past week we continue to get plants in the ground. The greenhouse work is starting to slow down a bit but planting outside is in full swing. The weeds never seem to let down so the hours spent on hands and knees or holding a hoe until your hand blisters is just part of the job this time of the year.

Harvest days have been extra fun lately because our kiddos have been enjoying helping the crew out. They’re a big part of the farm this year because their excitement for the crew and the work we’re doing is extremely high. It’s very sweet to watch.

Harvest 6

  1. Rainbow Chard—this dark leafy green is high in antioxidants and important vitamins and minerals including vitamin C, K and A and a healthy dose of magnesium (which many people are deficient in).

  2. Radishes—a rich source of magnesium, potassium and vitamin C. They have been studied and results confirm that they likely alter the way cancer cells reproduce so they may reduce cancer risk. They are full of fiber and for their tiny size contain a lot of health benefits. Remove the greens from these to help keep the roots crisp for storing.

  3. Beets—rich in folate, manganese and copper. Copper is very important as it helps make red blood cells and helps keep your immune system healthy.

  4. Cabbage—this tasty brassica helps reduce inflammation in the body. Inflammation is the leading cause of disease and incorporating more anti-inflammatory foods is very beneficial.

  5. Head Lettuce—A rich source of vitamins A, K and folate. Also anti- inflammatory!

  6. Baby Kale Mix—super high in antioxidants, contains vitamin C, Vitamin K, Manganese and various polyphenols.

  7. Fresh Garlic—the list of health benefits is almost too long!! It’s anti-fungal, anti- inflammatory, boosts immune health, and is full of antioxidants! Just eat garlic with every meal!

Recipe Suggetions

Cabbage Salad with Buttermilk Dressing (this is a great use of those chard stems and radishes!)

Swiss Chard & Pistachio Meatballs with Yogurt Sauce (the roasted beets and chard salad are a must with this meal!!)

Beef & Beet Patties with Spinach Avocado Pesto (try using the baby kale mix for the pesto instead of spinach!)

Breakfast Salad with Maple Glazed Turnips and Bacon (use the baby kale mix for the salad and radishes instead of turnips for this!)

Chicken Tacos with Radish Greens Chimichurri and Bok Choy Radish Slaw (use the swiss chard instead of bok choy for this)
