Howdy folks and welcome to your Tumbleweed Farm CSA week #3! We hope you’re feeling the need for a healthy week of leafy greens because that’s what you’re getting! In all honesty, sometimes these EXTRA green heavy boxes make us feel a little bad that there isn’t as much variety but this time of the year it really is all we have. The good news, I just whipped up the most kick-ass salad using most of this box and it’s the best salad I’ve had in ages. Eating this way is a good reminder that our bodies move and crave the season we’re in if we just tune in.
I hope you all give the below salad a whirl. It keeps well in the fridge for up to 3 days so that’s a major win! The tacos we made last night in recipe number two below are also bomb! Keep us posted on what you make this week.
Below are a few snap shots of this past week on the farm. We got watermelons and cantaloupes planted, fall cauliflower is already germinating in the greenhouse, and the summer corn is looking awesome in the fields!

Harvest 3
Rainbow Chard—this dark leafy green is high in antioxidants and important vitamins and minerals including vitamin C, K and A and a healthy dose of magnesium (which many people are deficient in).
Romaine Lettuce—It’s high in folate (if you’re suffering from allergies this season eat this green up!) It’s also a good source of copper and vitamins A, K and C.
Spinach— rich in iron, potassium, vitamins C & E, and magnesium. Spinach can also aid in digestion and has anticancer properties. Eat this veggie up!!
Radishes—are a rich source of magnesium, potassium and vitamin C. They have been studied and results confirm that they likely alter the way cancer cells reproduce so they may reduce cancer risk. They are full of fiber and for their tiny size contain a lot of health benefits. Remove the greens from these to help keep the roots crisp for storing.
Salad Mix—These leafy greens are a rich source of vitamins A, K and folate. Also a good anti- inflammatory leafy green.
Baby Bok Choy—Full of anti-cancer properties such as Vitamins C & E, beta carotene, and selenium which is thought to slow the growth rate of tumors.
Garlic Scapes—the list of health benefits is almost too long!! It’s anti-fungal, anti- inflammatory, boosts immune health, and is full of antioxidants! Just eat garlic with every meal!

CSA Crunch Salad (AKA “The Longevity Salad”) This was so stinking good, refreshing and healthy! Give it a whirl!
Chicken Tacos with Radish Greens Chimichurri & Bok Choy & Radish Slaw (this was divine!)
Spinach & Green Garlic Chicken Patties with Garlicky Mayo (use garlic scapes in place of green garlic!)
Swiss Chard & Feta Frittata (so easy and good!)
Miso Harissa Salmon with Garlic Scapes and Radishes (very tasty!)
Garlicky Swiss Chard & Chickpea Stir Fry (this is an oldie but a goody! I love this simple dish so much!)
